Cinnamon Rolls

2 tbs. yeast
1/2 cup warm water
3 tbs. sugar
*Combine in a small bowl and set aside

2 HOT cups water (you can also use scalded milk)
1 tbs. salt
1/2 cup oil (i use veggie or corn)
6-8 cups flour

*In a large bowl pour HOT water, salt and oil. Add two cups of flour. stir. When the yeast mixture has grown add it to the large bowl. mix together. add one cup of flour until you can knead. Knead for 5-10 mins, cover and let sit for one hour to rise.

Roll the dough out into a giant circle (or you can cut the dough in half and make two circles, using a rolling pin. Melt about 6 Tbsp of butter and pour over top of dough. Add a generous amount of cinnamon and sugar. Roll up dough lengthwise and slice into width you desire. Place rolls on greased cookie sheet or pan. Let rise for another hour.

Bake at 375 until lightly brown, about 25 minutes, depending on the thickness of your rolls. Top with Cream Cheese Frosting.

4 Tbsp melted butter
4 1/2 cups powdered sugar
1 tsp vanilla
1 pkg cream cheese, softened

When mixing, add the powdered sugar a little bit at a time so it's not overwhelming to mix in. Pour over cinnamon rolls and enjoy!

This recipe makes a lot of cinnamon rolls. If you find it too much for your family, after you have rolled them out and sliced them, but before you let them rise in the pan, line up the extra rolls on a cookie sheet and freeze them. When they have frozen, put them in a double lined ziploc bag. When you are ready to have them, simply place them on a greased pan on your counter, and let them thaw a few hours. As they thaw, they will rise. Bake as directed. Enjoy.
