Summer Break Pancakes!

This morning I was wanting to wake up my sleeping kids with the yummy smell of breakfast cooking.  I chose to make these whole wheat oatmeal pancakes, and I'm so glad I did. They were really great, and very filling.
Oat, Nut, & Wheat  Pancakes

1 1/2 cups old-fashioned oatmeal
1 1/2 cups whole wheat flour
1/4 cup flax seed
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups buttermilk
1 cup milk
1/4 cup applesauce
1 egg
1/4 cup sugar
3 tablespoons chopped pecans (optional)
 
I like to combine my wet ingredients first (buttermilk, milk, applesauce, egg, and sugar), in my mixer, and then add in my baking soda, powder, and salt.  Then I add the flax seed and flours in a little bit at a time until everything is thoroughly incorporated. Then I stir in my chopped pecans.
 
Pour about 1/3-1/2 a cup of batter on a hot griddle.  After a few minutes, when tops get bubbly and sides get golden brown, flip and cook the other side.  Serve hot, with your favorite pancake toppers.

Other than the pecans, are the pancakes chunky? These sound divine, but my kids don't like pancakes with "things" in them. :)

They aren't chunky at all. You can even grind up the oats, in your processor, if you want to make it smoother. To my kids, it was just another pancake...but it tasted so great and hearty.

Yum these sound good! As do the bars below. Although I might just eat the whole pan, as you said.
