Yummy Granola Bars!
Today is the last day of school for the kids! They are super excited for summer break to begin. If you are like us, you will spend lots of time outdoors this summer, and will need a yummy snack recipe. Friends, I bring you the best Peanut Butter Granola Bar recipe. It's soft and chewy and peanut-buttery and chocolaty and if you leave it out to cool, unattended, your husband will try to eat the entire pan.
The recipe came from Giada De Laurentis, from the Food Network.
Peanut Butter Granola Bars
1 egg white
1/2 cup chunky peanut butter
1/3 cup brown sugar
1/4 cup honey
1/2 cup (1 stick) butter, melted
2 cups old fashioned oats
1/4 cup slivered almonds, toasted
1/3 cup mini chocolate chips
**I also added 1/4 cup flax seed, 1/4 cup sunflower seeds, and 1/4 cup craisins, and I substituted slivered almonds for chopped pecans.
Preheat oven to 350 degrees. Line baking pan with parchment paper, allowing excess paper to hang over the sides. Spray parchment paper with cooking spray.
In a medium bowl, beat egg white until frothy. Stir in peanut butter, brown sugar, and honey. Add melted butter, oats and almonds (and whatever additional things you want to add, like craisins or mini marshmallows, etc). Stir until it is well combined, then add the mini chocolate chips last, so that they don't melt in the hot butter.
Spread mixture into your baking pan, pressing lightly to form an even layer. Bake for about 15 minutes, until the edge of the bars begin to lightly brown. Remove from oven and let cool for at least 1 hour. Put in fridge to set for an additional two hours. Cut into squares or and serve!
**It is important to let these cool in the fridge, otherwise they just fall apart. I made mine the day before, and let them sit in the fridge all night, to firm up.
