Tots!

This is a twist on one of our old favorites.  Tater Tot Casserole.  It's simple.  It's good.  Kids normally love it...it has tots in it after all!  We love tots around here, but I always have to tell the kids that they can't store them in the pockets of their jammer pants. Just one of those things.  (If you don't get the reference to Napoleon Dynamite..go rent the movie!)  My original recipe can be found in my cookbook.  This recipe uses some different ingredients, and the outcome is delicious.

Broccoli and Chicken Tater Tot Casserole

1 can (10.5 oz) of cream of chicken soup
1 can (10.5 oz) of cheddar cheese soup
1/2 cup milk
1/2 cup sour cream
3 Tbsp dehydrated onions
1 Tbsp dried parsley
1/2 tsp each of salt and pepper
1/2 tsp garlic powder
2 cups chicken, seasoned, cooked and diced
1 bag frozen broccoli florets
1 bag frozen tater tots
1/2 cup shredded cheddar cheese.

Cook chicken, then dice it up.  I like browning it, in the pan, a bit, just to give it some flavor.  Next, in a microwave-safe bowl, pour in your frozen broccoli, cover top with saran wrap, and microwave for 4-5 minutes.  Then, drain the liquid out and rough-chop your broccoli.  (If you just add your frozen broccoli to your mixture, it will get watery. This way, the water is steamed out, and doesn't liquefy your food!)  Alternatively, you can add fresh, chopped broccoli, and forget this step all together!)

Then, in a large bowl, combine everything except the tater tots and shredded cheese.  Mix well.  Pour mixture into a greased casserole dish.  Top with the tater tots.  Bake at 425 for about 45 minutes, until your tater tots are nicely browned and crispy.  Remove from oven and sprinkle the top with cheese.  The heat from the pan will melt the cheese.  Then, serve!

Ooooh, yummy! I lik this variation on your original tater tot casserole, which was the first recipe I made from your cookbook. Definitely a favorite every time I made it, I even had to give the recipe to two friends. :)

Looks yummy! Congratulations on your house! It looks beautiful and I can't believe how it worked out! How amazing that your buying a used house and still get to pick out carpet and counters! Karma. Seriously.
