Cookbook GIVEAWAY!

I want you all to know how much I appreciate your support these past few months. You have been amazing and uplifting and loving and caring and every other nice -ing word you can think of!

So with that, I am giving away one of my cookbooks. Just leave me a nice comment and I will RANDOMLY draw a winner on Monday. It will be a little Christmas present from me to you!

If you are still trying to find the perfect gift for your spouse, friend, relative, college student, newlywed, neighbor, etc...then what are you waiting for?? Give them my cookbook!! Right now, BLURB is having a super deal. If you buy 3 or more cookbooks, then BLURB will ship it to you NEXT DAY AIR for free!! So pick 3 lucky people in your life and send them a cookbook! The coupon code is BUYTHREE.

One of the recipes found in my cookbook is CITRUS PANCAKES with citrus syrup. It is fantastic. When blurb printed it out, I discovered a mistake with the quantity of one of the ingredients. The book says to add 41 Tbsp of baking powder. Folks, the real quantity is 1 Tbsp. Sad is the day that somebody measures out 41 Tbsp of baking powder. Sorry for the mistake! I double checked every page of the book a dozen times, but mistakes are bound to happen. To make it up to you, I'm posting the recipe here. Take the time to try it. It will change your breakfast world forever.

Citrus Pancakes
2 1/2 cups flour
4 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
2 cups milk
4 Tbsp melted butter
2 eggs
2 egg yolks
Zest of one lime, orange, and lemon

Combine dry ingredients. In a separate bowl, combine wet ingredients. Mix the two together and stir very well so there aren't any lumps left in the batter.

Pour a cup of batter onto a greased skillet and cook over medium heat until bottom is golden brown. Flip and cook the other side until done. Serve with citrus syrup.

Citrus Syrup
1 cup maple syrup
Juice of one lime, orange, and lemon
1 tsp cinnamon

Combine ingredients in a pot and heat on the stovetop until just to a boil. Reduce heat to low and simmer for 5 minutes, stirring occasionally. Serve over citrus pancakes.

So, leave me a comment to be entered into the drawing for the cookbook!

P.S. I just made the Fresh Cranberry Oat Cookies...and I added orange zest to the recipe. AMAZING!! Give it a try.

Thanks for another recipe! I made your baked potato soup for my family yesterday and it hit the spot on such a cold winter's day! I've never liked potato soup, but that was spectacular :) My 19-month-old ate an entire bowl. I'm so glad you and your family are all together once again!
