One of the recipes found in my cookbook is CITRUS PANCAKES with citrus syrup. It is fantastic. When blurb printed it out, I discovered a mistake with the quantity of one of the ingredients. The book says to add 41 Tbsp of baking powder. Folks, the real quantity is 1 Tbsp. Sad is the day that somebody measures out 41 Tbsp of baking powder. Sorry for the mistake! I double checked every page of the book a dozen times, but mistakes are bound to happen. To make it up to you, I'm posting the recipe here. Take the time to try it. It will change your breakfast world forever.
2 1/2 cups flour
4 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
2 cups milk
4 Tbsp melted butter
2 egg yolks
Zest of one lime, orange, and lemon
Combine dry ingredients. In a separate bowl, combine wet ingredients. Mix the two together and stir very well so there aren't any lumps left in the batter.
Pour a cup of batter onto a greased skillet and cook over medium heat until bottom is golden brown. Flip and cook the other side until done. Serve with citrus syrup.
1 cup maple syrup
Juice of one lime, orange, and lemon
1 tsp cinnamon
Combine ingredients in a pot and heat on the stovetop until just to a boil. Reduce heat to low and simmer for 5 minutes, stirring occasionally. Serve over citrus pancakes.
